Turkey Meatball Soup
— We love this soup! The meatballs are fantastic and you could use them in other recipes. We adapted this from a Rachel Ray recipe. —

Ingredients
- 1 tablespoon extra-virgin olive oil (EVOO)
- 1 /2 small onion, finely chopped
- 1 carrot, peeled and chopped
- 4 cups (1 quart) chicken stock
- 1 /2 pound ground turkey breast
- 3 tablespoons Parmigiano/Reggiano cheese
- 3 tablespoons bread crumbs
- 1 egg
- 1 garlic clove, grated
- 2 tablespoons chopped flat-leaf parsley
- Salt and fresh ground pepper
- 1/2 cup rice or 1 cup noodles (small). The grain or pasta you put in is up to you!
Directions:
- Heat the oil in a medium pot over medium heat. Sauté the carrots and onion for 5 min. Add the stock and bring to a boil.
- In a medium bowl, mix the meat with the cheese, bread crumbs, egg, garlic, parsley, salt and pepper. If the mixture is too moist, add a few more bread crumbs.
- When the broth comes to a boil, roll the meat mixture into 1-inch balls and drop into broth. Now stir in the rice or noodles. Cook for another 2-3 minutes or until the pasta is done.
